How a bowl comes together
Nine hours of patience in every spoonful.
There are no shortcuts in our kitchen. Here is what happens long before you walk in, and why the first spoonful tastes the way it does.
- 10 PM
Step 1
The broth
Whole free-range chickens go into the pot with smashed ginger, spring onions and white peppercorns. They simmer low all night until the broth turns gold.
- 4 AM
Step 2
The rice
We rinse jasmine rice, crack the grains and stir them into the broth. Three hours of slow stirring turns them silky, never gluey.
- 7 AM
Step 3
The finish
Doors open. Every bowl is finished to order with hand-pulled chicken, ginger threads, scallions, crispy shallots and a drizzle of sesame oil.
- Broth simmering
- 6 hrs
- Rice slowly stirred

Reviews
Regulars say it best.
A few words from the people who keep coming back for another bowl.
I have tried every congee spot in town and this is the one I crave on cold mornings. The ginger is just right.
Mei L.Comes in every Saturday Ordered ahead on my way to work and it was hot and packed at 7:30 sharp. The soft egg bowl is my weekday ritual now.
Daniel R.Orders ahead twice a week My mom took one spoonful and said it tasted like the porridge her mother used to make. That says it all.

Feeding a crowd
Big pots for big days.
Our Family Pot serves four, and we cook larger batches for offices, birthdays and get-well meal trains. Give us a day's notice for orders of more than ten bowls.
Good to know
Questions, answered.
Something we missed? Call us at (503) 555-0142 and we will happily talk porridge.
Is your porridge gluten-free?
The porridge itself is made only with rice, chicken, ginger and water, so it is naturally gluten-free. Our soy sauce and fried dough sticks are not, so let us know and we will leave them off.
Can I order for a group?
Yes. The Family Pot serves four and comes with every topping packed on the side. For more than ten bowls, call us a day ahead and we will cook a pot just for you.
How do I reheat leftovers?
Porridge thickens as it cools. Warm it gently on the stove with a splash of water, stirring until it turns silky again. It keeps for up to three days in the fridge.
Can you make it milder for kids?
Our Little Bowl is gently seasoned for younger appetites, and any bowl can be made with less salt or no pepper. Just add a note to your order.
Do you have vegetarian options?
Every bowl is cooked in our chicken broth, so the porridge is not vegetarian. Our sides and drinks are, apart from the extra pulled chicken.
Do I need to pay online?
No. Order ahead here and pay at the counter when you pick up, by card or cash.
